Use these recipes to make quick, gluten-free granola bars for when you’re on the go, or let each family member create their own special variation. Just add dried fruit, nuts, or anything you can dream up! You can even make your own breakfast granola, include it in dessert recipes, or add it raw to your protein smoothie.

 
 

EASY TO MAKE GLUTEN-FREE GRANOLA MIX RECIPES

POWERBALL GRANOLA BITES

You will need:

  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/4 tsp vanilla (optional)
  • 1/4 cup dark chocolate chips
  • 1 1/2 cups *Cloud 9 Super Seed Granola Bar Mix

Optional:

Pre-heat oven to 350 degrees Fahrenheit and toast Super Seed Granola Bar Mix on a baking sheet for 8-12 minutes, until slightly golden.

Directions:

  1. In a small bowl, stir together almond butter, honey and vanilla with a spoon until smooth.
  2. Add chocolate chips and Cloud 9 Super Seed Granola Bar Mix. Stir until fully combined.
  3. Scoop and roll into one inch balls.
  4. Store in the fridge until ready to eat.

Makes approximately 3 dozen pieces.

 
 
 

SUPER SEED GRANOLA BARS

You will need:

  • 2 cups of Cloud 9 Granola Bar Mix
  • 1/4 cup coconut oil (or butter)
  • 1/3 cup honey
  • 1/3 cup brown sugar
  • 1/2 tsp. vanilla

Optional:

To add 1/2 cup of dried fruit, nuts, or chocolate chips, reduce the Granola Bar Mix from 2 to 1 3/4 cups.

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease an 8” x 8” pan or line with parchment paper.
  3. Soften coconut oil (or melt butter) in a small sauce pan over low heat.
  4. In a medium bowl, mix oil, honey, brown sugar and vanilla until smooth.
  5. Add Cloud 9 Granola Bar Mix and stir until coated.
  6. Scrape the mixture into pan, press down firmly, and bake for 25-28 mins.
  7. Allow to cool almost completely before removing it from the pan, cut into desired sizes, and cool completely.
 
 
 

CHOCOLATE PROTEIN BAR

You will need:

  • 1 cup dates, pitted
  • 1/4 cup almond butter
  • 1 cup whole almonds, roughly chopped
  • 1 1/2 cup Cloud 9 Granola Bar Mix
  • 2 scoops (72g) chocolate protein powder
  • 1 Tbsp cocoa, sifted
  • 1/2 cup rice milk

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Line an 8” x 8” baking pan with parchment.
  3. Combine almonds and Cloud 9 Granola Bar Mix on a large baking sheet.
  4. Toast in oven for 10-15 minutes, until golden brown.
  5. Set aside to cool.
  6. Soak dates in hot water (10-15 min.) or simmer with water in a small sauce pan on medium heat, until soft.
  7. Drain excess liquid from dates.
  8. In a small food processor, pulse dates until they are pureed. This will be quite thick.
  9. In a medium sized bowl, add date puree, almond butter, chocolate protein powder, cocoa and rice milk.
  10. Mix until a smooth mixture is formed.
  11. Add toasted mixture and stir until combined.
  12. Press into prepared pan and freeze until firm, about 2 hours.
  13. Cut into desired pieces and wrap individually.
  14. Store in an airtight container in the fridge.

Makes 12 – 50g bars. Each bar contains 9 grams of protein.

 
 
 

PEANUT BUTTER & JAM GRANOLA BAR

You will need:

  • 2 1/4 cup Cloud 9 Granola Bar Mix
  • 1/4 cup Cloud 9 All-Purpose Baking Mix
  • 3/4 cup peanut butter
  • 1/4 cup honey
  • 1/4 cup brown sugar, lightly packed
  • 3 Tbsp butter, salted
  • 1/8 tsp salt
  • 1/3 cup strawberry jam

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Line an 8” x 8” baking pan with parchment.
  3. In a small sauce pan over low-medium heat, stir peanut butter, honey, brown sugar, butter and salt until combined.
  4. Remove from heat and in a medium sized bowl, combine Cloud 9 Granola Bar Mix and Cloud 9 All-Purpose Baking Mix.
  5. Add the warm mixture and stir until combined.
  6. Pour mix into prepared pan.
  7. Reserve approximately 1/2 cup of mix for topping.
  8. Press mixture into pan until level.
  9. Spread the jam evenly across the top and sprinkle the reserved mix on top of the jam layer.
  10. Bake for 28 minutes.
  11. Cool completely in pan.
  12. Remove from pan and cut into desired bar shape.
 
 
 

GLUTEN-FREE GRANOLA

You will need:

  • 3 cups Cloud 9 Granola Bar Mix
  • 1/2 cup slivered almonds
  • 1/4 cup honey
  • 3 Tbsp brown sugar
  • 1/4 cup canola oil
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/2 cup dried cranberries (or your dried fruit of choice)

Directions:

  1. Preheat oven to 325°F (165°C).
  2. Line a cookie sheet with parchment.
  3. Combine Cloud 9 Granola Bar Mix and almonds in medium sized bowl.
  4. In small sauce pan, over low-medium heat, combine honey, brown sugar, oil, cinnamon, nutmeg, vanilla, and salt.
  5. Whisk together until smooth.
  6. Add mixture to bowl of dry mix and stir until combined.
  7. Evenly spread the mixture on prepared baking sheet and bake for 10 minutes.
  8. After 10 minutes, remove tray from oven and stir granola around.
  9. Bake for another 5 minutes.
  10. If granola still looks light, bake for one minute at a time. Bake until golden brown.
  11. Once baked, remove from oven and toss with dried cranberries.
  12. Cool and store in an airtight container.

To make parfaits – place small amount of granola in the bottom of a glass. Add a layer of Greek yogurt, followed by a layer of your favorite fruit preserve, compote, or frozen fruit (thaw fruit before serving). Spoon in another layer of Greek yogurt, and top with a sprinkling of granola. Serve chilled.

 
 
 

DARK CHOCOLATE & CHERRY GRANOLA BAR

You will need:

  • 2 1/2 cups Cloud 9 Granola Bar Mix
  • 1 cup slivered almonds
  • 1 cup dried cherries
  • 1/2 cup dark chocolate chips
  • 2/3 cup honey
  • 3 Tbsp coconut oil
  • 3 Tbsp coconut sugar
  • 1 tsp vanilla
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Line a 9” x 13” pan with parchment.
  3. In a small sauce pan, combine last five ingredients.
  4. Stir over low heat until combined.
  5. Remove from heat and let cool until room temperature.
  6. Combine Cloud 9 Granola Bar Mix, almonds, dried cherries and chocolate chips in a medium sized bowl.
  7. When mixture is cool, pour over dry mix and stir until everything is coated. Pour into prepared pan and press firmly with damp fingers.
  8. Bake for approximately 28 min., until golden brown.
  9. Leave in pan until almost cooled.
  10. Remove from pan and cut into desired size. The bars cut best when they are slightly warm.
  11. Wrap individual bars in plastic wrap or store in an air tight container.
 
 
 

OATMEAL RAISIN GRANOLA COOKIES

You will need:

  • 1 cup Cloud 9 All-Purpose Baking Mix
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup butter, salted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, lightly packed
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup raisins
  • 1 1/4 cup Cloud 9 Granola Bar Mix

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Line baking sheet with parchment paper.
  3. In a bowl, mix the first five ingredients and set aside.
  4. Combine butter and sugars in a stand mixer or bowl and mix with hand mixer until light and fluffy.
  5. Add egg and vanilla.
  6. Once mixed, carefully add the bowl of dry mix and stir by hand until combined.
  7. Add raisins and Cloud 9 Granola Bar Mix.
  8. Stir until fully combined.
  9. Scoop large portions (about the size of a golf ball) and place on prepared baking tray, several inches apart.
  10. Flatten slightly and bake for 13 minutes until edges are golden brown.

Makes 15 large cookies.

 
 
 

GLUTEN-FREE SEEDED DINNER ROLLS

You will need:

  • 2 cups Cloud 9 All-Purpose Baking Mix
  • 1 Tbsp granulated sugar
  • 2 tsp salt
  • 1 package instant yeast (2 1/4 tsp)
  • 3/4 cup Cloud 9 Granola Bar Mix
  • 1 3/4 cup warm water
  • 2 eggs
  • 1/4 cup oil
  • 1/4 cup Cloud 9 Granola Bar Mix (for top of buns)

Directions:

  1. Preheat oven to 375°F (175°C).
  2. Lightly oil one standard twelve cavity muffin tin.
  3. Measure the first four ingredients into mixing bowl of a stand mixer. It is preferred to use a stand mixer with a paddle attachment, but if not available, you can mix by hand. Add water, eggs and oil into mixing bowl with dry mix. If using a stand mixer, mix on medium speed until combined. If mixing by hand, mix with a large spoon until thoroughly combined. Scrape down sides and bottom of mixing bowl with spatula.
  4. Continue to mix until mixture is smooth with no flour lumps.
  5. Add first (3/4 cups) amount of Cloud 9 Granola Bar Mix.
  6. Mix until combined and scoop mixture into prepared pan, dividing it evenly.
  7. Top with a sprinkle of Cloud 9 Granola Bar Mix, and gently press into the buns to flatten them. Place pan on stove top and cover with clean towel.
  8. Leave to rise until buns have doubled in size (about 20-30 minutes). When buns are finished rising, place on middle rack in the center of your oven. Bake for approximately 25 minutes, until internal temperature reaches 200°F (95°C).
  9. Remove buns from pan and cool on a cooling rack.
