Pineapple Mango Sorghum Salsa

Pineapple Mango Sorghum Salsa

Serves: Approx. 4 Prep Time using pre-cooked Pearled Sorghum: Approx. 20 minutes

Ingredients:
  1. 1 cup tomatoes diced
  2. 1 cup pineapple diced
  3. 2 cups cooked Cloud 9 Organic Pearled Sorghum
  4. ⅓ cup finely chopped red onion
  5. ⅓ cup chopped red pepper
  6. ⅓ cup chopped mango
  7. 1 small garlic clove minced or garlic press
  8. salt and pepper to taste
  9. 2 tablespoons fresh cilantro leaves (chopped)
  10. 1 tablespoon olive oil
  11. 1 tablespoon lime juice
  12. 1 teaspoon finely chopped Jalapeñopepper seeds removed (optional)
Directions:

Mix all ingredients and serve as a side dish to your favorite fish.

Sorghum Tips:
