Mediterranean Style Sorghum Salad

Mediterranean Style Sorghum Salad

A delicious Mediterranean style sorghum salad with cucumber, Kalamata olives, basil, Feta cheese.

Serves: Approx. 3-4 Prep Time using pre-cooked Pearled Sorghum: Approx. 20 minutes

Ingredients:

  1. 1 cup pre-cooked Cloud 9 Organic Pearled Sorghum
  2. 1 cup tomatoes medium diced
  3. 1 English Cucumber, medium or half a large
  4. 1/4 cup chopped red onion
  5. 1/4 cup chopped red or green pepper
  6. 2 tablespoons fresh basil leaves (chopped)
  7. Fresh basil leaf for garnish
  8. 1/4 cup chopped Kalamata olives (optional)
  9. 1 tbsp Lemon juice
  10. 1 tbsp Balsamic vinegar
  11. 2 tbsp Olive oil
  12. 1/2 cup crumbled Feta
  13. Salt and Pepper to taste

Directions:

In a salad bowl, stir together ingredients. Add salt and pepper to taste.
